Ingredients

For 2 quesadillas

  • 2 large eggs
  • 2 teaspoons unsalted butter, divided
  • 1/8 teaspoon fine salt
  • 1/8 teaspoon black pepper
  • 1 small crisp apple, cored and thinly sliced
  • 1 cup baby spinach, roughly chopped
  • 1 cup sharp cheddar, shredded
  • 2 (8-inch) flour tortillas

Instructions

  1. 1

Beat the eggs with the salt and pepper until combined.

  2. 2

Warm a nonstick skillet over medium-low heat. Melt 1 teaspoon of the butter, add the eggs, and stir gently until fully set with no liquid egg remaining. Transfer to a plate.

  3. 3

Add the apple slices to the skillet and cook for about 1 minute per side, just until warm. Transfer them to the plate with the eggs.

  4. 4

Melt 1/2 teaspoon of the remaining butter in the skillet. Lay in one tortilla. Sprinkle 1/4 cup of cheddar over half of it. Add half of the spinach, apple, and scrambled eggs, then sprinkle another 1/4 cup of cheddar over the filling. Fold the tortilla over.

  5. 5

Cook over medium-low heat for 1 to 2 minutes per side, until the tortilla is golden and the cheese has melted. Transfer to a plate and repeat with the remaining butter, tortilla, and filling.

  6. 6

Rest each quesadilla for 1 minute, then cut into wedges and serve warm.
